From hedge tree to lemon tree?

I'm new to growing lemons but have a new place with a Eureka lemon tree about 12' high. Previous gardeners have always trimmed the tree with hedge clippers. Now, all the fruit is growing inside the tree and it looks mostly like a big hedge. It's shooting up fresh growth so I'm wondering at this point do I just stick with the hedge trim? I'd like to see it open up like a real tree but that seems like a lot of cutting. Pruning guides assume you start with a real tree so I'm not sure how to apply advice. I'm tempted to just prune away a lot of the old bushy layer and leave more of the new longer growths to turn into branches. Any tips or ideas?? Thank you!
