Help with kitchen lighting

I'll do my best to explain. The drawing is just the first electrical plan we have been given and we still have to go through and make changes so the lights can move if need be.

The house is a log cabin which is just being built. Footers poured and they just started concrete block. My kitchen will expand through 2 different roof systems.

The ceiling is vaulted front to back on the right side. The dotted line that crosses over island is a ceiling break that is at 9ft and the ceiling then slopes up from there to the left. The other dotted lines are beams at 9 ft. Any ideas of how to handle lighting in the kitchen?

I was thinking to put 2 lights in this style over the island:

Fixtures like this over the windows:

We will have under cabinet lights. I don't know how to handle additional lights. Do I do pendants being that there are different ceiling heights and if so what style do you suggest?
