Most of the citrus trees you will find in the local southern Nevada nurseries or home improvement stores are on semi-dwarf rootstock and will grow to 6 to 8 feet (or taller if not pruned.) . The only true dwarf I have seen is a Meyer lemon and it will stay under 4 foot in a container. It should be possible to find a dwarf lime as well.

There are genetic dwarf fruit trees (peaches and nectarines) and they will also stay small and can be grown in a container or the ground.

I think your trees should survive the summer heat and light intensity if you get them in the container or the ground soon. Remember that citrus do not like wet feet so a good draining potting mix is a must but will require watering almost daily during summer. The bigger challenge will be the cold temps in the winter. You will likely have to cover the plant (citrus, the fruit trees will be dormant) on nights below freezing or bring them in if you have them in containers. Also remember that container plants depend on you to give them fertilizer, they cannot pick up nutrients from the amended soil while growing in a pot.

Will the tag say what the root stock is?

It won't always say what the rootstock is but the citrus will be designated as dwarf or semi-dwarf. You want dwarf if you don't want large trees. I know that at least one local nursery sells lots of dwarf Meyer lemons. They will stay small, like for a patio, balcony or small enough to bring inside.

The peaches and nectarines need to be labeled as dwarf or genetic dwarf in order to be container grown. Again, local nurseries should have some this time of year. Choices will be limited soon so I advise buying soon as long as you can plant them or put them in containers soon.
