I usually prefer the longest handles possible However, given the smallest dimension you list is 380mm (15"), this is going to dictate your selection, in my opinion. In this situation, I would aim for 8" or 10" handles to give you that 'long elegant handle' aesthetic without feeling it is squeezed onto your smallest dimension.
