either one. it's your preference. I would do a very light gray grout. a very light gray just disappears and lets the tile stand on it's own. if you do a matching white grout, it will look like one giant piece of white tile.

Match in close color. I like it going across tile & most people do that.

I think I'm liking the horizontal, visually it carries the eye horizontally around the kitchen. I prefer to try to match grout to tile as much as possible, not darker but that is personal preference. You can also seal the grout if you're worried about staining. This will have to be repeated periodically but it's really easy. Good luck!
