Not difficult; and not my recipe. Eggs Benedict is a classic; and if you google it, you will see how it is made. I top my sauce with a bit of paprika for color and decoration. As for the hollandaise, first you must have an egg whip. 2 eggs and 1 yolk whisked; add 3 Tbsp Meyer juice and 2 Tbsp water. Melt a cube of butter in a sauce pan; and when it starts to sizzle add the egg mixture bit by bit; and whisk and cook until the egg whip leaves a print when lifted. Add a bit of salt and a bit of cayenne pepper or chipotle.
