You need to research each species separately i.e. grapes and blackberries. The term 'berries' doesn't mean anything in botanical terms and each kind is different.

The blackberries, planted but months ago, do not need pruning this year.

Once blackberry growth has stopped in the autumn, you can prune off the original planted "stick", and keep all the new growth.

Next year, for better advice, post pictures or at least a size description of the plants.

I would just let the blueberries grow, unless there are crossing canes. I seldom cut any growth off the first year, just let them grow to get some size on them.

With blackberries, you could just cut off at 3 feet and let them branch out. If any of the blackberry canes touch the ground, they will root and start another plant. Your next year canes will be more robust than the canes that grow this year.

With grapes, most let 2 canes grow and cut off all side branches, Then, cut the weaker cane of and let it grow until it reaches the height you want. Then cut about 3 inches below and let next 2 buds grow the 2 laterals. You may be able to grow the main cane and 2 laterals in one year.
