I would do pocket doors in these bathrooms. They will give the room more openness, Do you have inspirations pictures for style ideas? The bathroom sizes would appear to be 8ft10" x 5ft for one. I would make sure that the windows were waterproofed and that wall would be where the showers would go. You could put in a 5' x 3.5' shower stall. I would place the wall at the 5' wall. This would allow 30" space for the toilet and 36" vanity.

For the second bathroom, the room would be 8ft10" x 4ft. You will lose a few inches for the depth of the wall. A 6" wall may be needed if you are putting the plumbing in the dividing wall. In this bathroom, the shower would be 4ft x3.5' deep. This would allow 30" space for the toilet and 36" vanity. I would use a shallow vanity that is 18" deep which would leave you 30" of walking space in the room. It may be a little tight. Would you consider a wall hung toilet? This would allow this bathroom to get under 21" deep and allow the appropriate and legal clearance in front of it. It may still be a tough fit.

Another option is the split the room in half, where each room is 8ft10" x 56" with a 6" wall separating them. With 56" deep and wall mount toilets, you will have 35" of space in front of the toilet.

The pocket doors was a great idea. I was thinking something more like this. What do you think? this is drawn to scale, each tiny square represents an inch. My concern is whether the space left to move about between right bath and vanity; and between the left bath and commode; is sufficient.

I can not read the little squares so I can't tell if you have enough room to enter the shower. However I would suggest if you have the room switching the toilet and the sink in the bathroom on the left. Therefore you will not see the toilet when the door is left open. Also, it might give you better clearance for the shower.
