When to plant potatoes for the fall in Zone 8b?

We've just moved into a home in Hinesville, Georgia and I would like to grow potatoes for the fall/winter. When should I plant them in the ground? Right now the daytime temperatures are around 85+ and the night time around 75. Is this too hot? The place where I intend to plant them is in full sun for the whole day. Thanks for your advice!
