clearing new grass

Hello - I've never posted something here before, but I'm hoping for some help. My family just moved into a new house on a 1-acre lot. The lot was previously a corn field for many decades. I asked the contractor not to plant grass until he heard my garden design plans, but he went ahead and put super cheap weed-filled grass seed on the entire acre. I'm trying to get rid of it in many areas so I can plant native wildflowers/grasses, a cutting garden, fruit trees, berry bushes, vegetable garden, etc. Reading online about prepping soil has gotten a bit confusing. Tilling seems to be fast but possibly a disaster as it may dredge up buried weed seeds and be counterproductive. But I've also read that if you were, say, turning a corn field into a wildflower meadow, you could till because the cultivated area wouldn't have a lot of weed seeds. Could I safely assume that since the weedy grass has only been growing for 6 weeks that if I tilled it, I'd get clear-enough plots for my preferred plantings? Or should I solarize/glycophosphate bomb the rest of this season and hope to get things planted next season instead? Thanks!
