I'd go with a pale turquoise subway tile.

Subway tile will be hard to find in Mexico... but that would be great.. the turquoise is a very green turquoise

I would match the backsplash to the brick ceiling or I would just paint the backsplash. You dont want too many colors and textures going on.

I agree the kitchen is really nice and I'd try to be careful the backsplash doesn't overwhelm that nice balance that you have. I'd find whatever tile you can that is a solid color in the same tone as the nice countertop (but lighter). You could also consider a beadboard splash painted in a light coordinating turquoise.

What about Tin ceiling tiles.. .?? Like a copper color ?

I don't know about that - I'd work with the turquoise. Once again, I'd hate to throw off the great color balance you have right now. A copper color might clash with the floor.

You can also notice I need light fixtures.. window treatments etc.. always a project!!

You could do something like this; just a strip of color within a white or other neutral background

Hove you thought of not putting up a back splash. But instead painting the two wall cabinets a collar, a red and just painting the wall a yellow in a good washable paint. Please do not use glass tiles it is so in that you will be dating the kitchen.

Nice kitchen. I would be tempted not to make a big feature of the tile as you might in a modern style kitchen. I think a repetition of the shape of the tile on the floor....sort of a morrocan feel...in a smaller size would be perfect. And perhaps in a subtle soft color to blend with the counters. Then, punch it up with what you put on the counters. Do a Houzz search on mexican tile. You can go to Blanchard and look at my tile section, accumulated over time.

Have you ever thought of and avant garde tile backsplash, you have lots of skilled tile setter that may love the challenge of making a pattern out of 18" tiles

I would go with pale turquoise glass splash back - the colour of sea glass.

Please avoid any further use of turquoise or red and use white ceramic tiles the same color as your walls, you can even get away with a pattern which would be very Mexican in that case go with black accents
