Harvesting French red shallots

I've grown shallots for several years, for the last several years in containers. This year I have enough real estate to be patient, but .....maybe not the nerve. Planted last December.

I've harvested some, and some more, but have one more clump to go. Great size so far, but they didn't really push up out of the ground like they sometimes do.

What are the pros and cons to pulling before ALL the greens die down? The part that is still green seems to be the stalks that flowered, they don't seem to be going anywhere, and I wonder if they are feeding on the bulbs.

Harvested a week ago. Greens still green!!!

Stiil in the Earthbox. Not pushing up, nor browning down.
