Can the butcher block be replaced sometime in the future after if is worn? What would be the best way to protect/care for it?

    Yes it can be replaced.

    Keep your cutting board clean by washing it with hot soapy water after each use and dry it with a clean paper towel or let it air dry. If you want to sanitize the board more thoroughly, a diluted mixture of chlorine bleach or vinegar solution consisting of one teaspoon of liquid chlorine bleach in one quart of water or a one to five dilution of vinegar. Do not soak or submerge the board in water, for this will disrupt the moisture content and cause the rails to split. Wood cutting boards are NOT dishwasher safe. It is also extremely important to give your cutting board a good oiling on all surfaces every 3-4 weeks.

    Food grade mineral oil is used to preserve board. Other oils will be rancid, taste bad.

    I like my 1949 under the counter butcher block cutting boards. I have four of them. When I bought the house they were warped. A carpenter reglued, patched and sanded them. I've been caring for them with Howard Wood Block Conditioner. Food Grade Mineral Oil & Natural Waxes (Home Depot). Actually I don't cut on them. I put a thin plastic cutting mat down on top. It feels different to chop on plastic on wood vs on top of a hard counter top. That I can easily wash. Otherwise the board attracts mice in the fall/winter. I use the boards a lot for extra space. They almost double my counter top usable space in times of need.

    I should add. Please ignore the ugly fake butcher block formica counter tops. I dream of getting rid of them.
