Insert stakes around the target and use those to hold the wire of your choice in place. Probably the key point is that the spaces in the mesh are close enough together that deer cannot fit their faces through them, should they be so inclined. Otherwise unless it turns out that they like your Prunus x cistena so much that they will stand on two legs to get at it the enclosure probably only needs to be a little ways above normal deer head height.
