I would get a mirror that extends all the way to the door frame and then extend it to the height of the door frame vertically as well. Get mirrored switch/plug plates. Then get 3 single lights preferably with an arm or extendable arm so you can get light focused over the sink. The ones I'm showing also take up some vertical height as well. By extending the mirror, you should be able to center any light over the sinks. If you get something with a shade make sure it's not too wide as you won't be able to center it especially the one on the wall side. If you would have room, you may want to add a frame over each sink as long as it doesn't throw everything off center and add a tall cabinet in the middle. (Eliminate 3rd light). See pic.
