It is a native persimmon, still very unripe. It will get all soft, squishy and purplish/orange in color when fully ripe in October/November. They are very yummy when filly ripe, and make a really great wine too! Nice chacos by the way!

Don't we need to check the seed to see what kind of winter we're going to have?

I like the native persimmons best right after the first freeze has turned them almost black. The cold takes out some of the astringent flavor.

If your trees are where coyotes can reach the fruit, they feast on them, and then spread the seeds everywhere.

Be careful where you let them grow as they sucker underground and form large groves over time....which is find, as long as they aren't invading a garden or yard space where you don't want to grow an entire grove of persimmon trees.

You have to wait until they are mature and after a frost has caused them to drop to the ground to predict the winter.

Persimmons are best after a real hard freeze and they kind get sort of a fig like taste to me. My neighbor used to make persimmon bread. My Grandpa used to make what he called Persimmon Beer out of the ripe persimmons.

I make persimmon wine, and it is darned tasty, and it has a honey/cognac flavour to it.
