Nothing to apologize for but do understand that the locule (pocket) formation or lack thereof is primarily a climate controlled response. Genetically, all tomatoes will have locules and be either bi-locular or multi-locular but the formation of them can be affected by weather/temperature extremes, moisture availability, and nutrients during formation.

Plus how they appear often all depends on how you slice them, vertically or horizontally. ;-)

So if i understand you correctly you are primarily looking for paste and/or heart varieties rather than slicers and/or beefsteaks. Roma is a bilocular fruit as opposed to say Paul Robeson which is multi-locular. Am I right?

There are different kinds of multi-locular as well, though. For example, Pantano's locules

are never going to look like Green Giant's locules:


The configuration is largely genetic. Size and number may vary according to environmental conditions, and there may be some distortion, such as at the bottom of the Green Giant, if there's incomplete pollination or a bit of disorder if you get fused fruit, but it's fairly easy to characterize locule layout as a variety trait.
