Pruning help?

I live in northern NJ and bought a house with a lot of landscaping, which I don't k ow much about. My Gardner came over last weekend and gave all my bushes a haircut. Some of them were pretty overgrown with new growth this year, but the haircut included giving my hydrangeas and oak leaf hydrangeas a shape up, and trimming some bushes that flowered this summer. It seems pretty early in the fall for a trim for all of the plants, I also thought you shouldn't trim hydrangeas, and finally I think some plants prefer to be trimmed in the early spring. I appreciate any insights on timing of pruning and how to know when to prune.
