The basics of icemaker operation is an ice harvest approximately every 80-90 minutes. It's the physics of how long water takes to freeze and drop to the harvest temp which for most icemakers is around 15deg F. For a crescent shaped ice cube this is 8 cubes every harvest which is about 120ish cubes a day. For a flex tray icemaker the harvest time is about the same amount of time maybe slightly less but depending on the cube amount per tray the count will vary.

I am about to purchase a Thermador column, refrigerator and wine storage. Would you go that route again? I am going to put custom panels on. Is it quiet?

My customers are very happy with the Thermador units. Extremely quiet. With the right panels you can make the unit completely disappear in the cabinetry.

Thermador columns are quiet. (Their oven fan is what is loud.) Fridge very quiet though. The ice maker seems to make an insane amount of ice (who uses that much on a regular basis?) but please note that this is coming from someone who has never had any kind of ice maker at all before, so take my reaction with a grain of salt. But yes, quiet.
