I think they are a PITA in any space . When I have a client that wants certain things I always get them to imagine making dinner in the space . So maybe start with the idea of 2 islands and see how you would prepare a big dinner, not a sandwich for lunch.

My experience in designing the actual layout for very large kitchens all depends on the client's lifestyle. Do they host most of the family gatherings, do they entertain a lot? Is the family itself large in numbers? What's wonderful about 2 islands is you have created flexibility in the way you use the space. By creating different task areas you are not right on top of each other while prepping. And it's easier to create a kosher setting, one for meat other for dairy. Also think of being able to set up a buffet of dinner on one and the other for bar/beverages. Yes Jean is right make sure the 2 islands do not cut up the kitchen, you want to make sure your traffic pattern & task to appliances stays to code. The only downside I think is......as human we all naturally love to gather in the kitchen and a lot Chefs of the house would prefer they disperse to other areas in the home. So these factors are what I would recommend to consider when laying out your floor plan with 2 islands.
