Unless you prove to be allergic to the sap, don't worry about it at all. Just wash your hands after handling them. If you are going to do any cutting however, it would be wise to wear gloves so that if your knife slips, perhaps you won't cut yourself and get sap into an open, deep wound. I handle my adeniums with my bare hands all of the time but I do take extra care if I am grafting.

I cut my finger very deep last season with a surgical knife while grafting, there was sap all over the knife didn't get sick or infected you will be ok just don't lick the sap off:×)

Ouch!...and just to add, don’t rub your eyes when you’ve got sap on your hands as it can be very irritating. People can get different reactions to the sap, I don’t bother wearing gloves myself but I’ve often realised it was still on my hands much later on as it tastes very bitter indeed!
