I try to keep mine in growth because Dr. Dimmitt has said that the plants will "grow through" ailments that would kill a dormant plant.

I have lost some plants, but they were all lost in the transition time between inside under the LED's and outside. This year, I think I got them inside in time (before they stopped growth).

That said, if you want to let them go dormant, just let them dry and sit in a cool dark place that isn't too cold. (I'm not sure how cold your garage gets in Pittsburgh)

Thanks! I think my Dorothy doors might be better than the garage. I'm going to keep my favorite by a window and the other to under the bulkhead and we will see if they survive.
