Old metal cabinets from salvage would work. That’s what real modern farmhouses of the 50’s had. Or are you wanting the dysfunctional Disney fantasy farm version?

Pine would be pretty authentic. However, it is a soft wood and will show marks, etc. A good stain to emulate old pine cabs is Minwax Early American. If you google the name of the stain and pine, you'll get some images of the golden brown colour and can see if it's what you want. Quarter sawn white oak will make more sturdy cabs and also give a lovely colour when stained.
