Help with making a double closet cabinetry for new Kitchen.

Hi everyone, I would really use some help! I am in the final stages of rebuilding my condo destroyed by a fire last year! The condo association let the unit owners affected (4 condos destroyed) make minor changes in our floor plans. I chose to remove a wall between a former dining/office area and my galley kitchen. By doing this I have opened up and doubled my kitchen space and I love it. The problem is now what to do with this "closet". (which now has some sort of access panel on the bottom back wall inside where technicians can get at the internal wiring - so I need to be able to get to that panel) Old condo, this was a double closet with 2 sliding doors and storage overhead. I was only allowed to get enough cabinets to make up for what I lost, but I know I am going to need more. What would you do with this spot? Countertop with overhead cabinets? Sliding doors with pantry space inside? I'm at a loss and would love to hear some ideas! You are viewing the entire kitchen from this vantage point. Thanks!
