Calamondin Honey for tea

Here's another way to use all those calamondin fruits.

My wife is getting on the citrus band wagon too. Today she made another batch of Calamondin Honey. I didn't know she had been making this until today.

She said she uses it when making tea. It's just Calamondin slices smothered in Honey. She uses a spoonful when boiling Ginger root & Calamondin tea, or when just making a regular hot water tea. She said she can freeze the Calamondin honey too and still spoon it out, because honey doesn't freeze.

Just thought I'd share an interesting way to use calamondins. For a citrus that's often considered just ornamental, its fruit seems to make its way into many areas of our kitchen.

Thanks for sharing. Technically, Calamondin Honey would be honey made by bees from the Calamondin flower; but who cares about technical issues what you have is calamondin infused honey. One of my associate growers makes Meyer lemon honey; he has a couple thousand Meyer lemons and about 2,000 hives of bees. Really, it may be the best honey I have ever tasted.

Wow, meyer lemon honey sounds great. My grand dad use to keep bees and I enjoyed his sourwood honey growing up.

John, are your lemons for sale in stores on the east coast of US yet? I'd love to buy some from your farm.

Sorry, no; if you find a Meyer lemon on the NE coast of the US today, it is flown in by air from New Zealand. California now cannot even supply the California market.

How do you all train your bees to visit one kind of flower. Clover honey, tupelo Black locust honey, or dandelion honey. wouldn't the bees just go to the closest flower which might be clover for one an catalpa for another.

Steve,

You put the bees in the center of the flowers; of course they go to the closest flower; and while 100% of the nectar may not be from that particular flower, it is close enough to call it by that name.

Yum Dave! Good idea your wife had! I may do that with some of our honey from last year. I will say that just today I made some hibiscus tea and added a bit of honey and one calamondin....it was incredible!

Yes, I do the same. One of my favorite tea blends is hibiscus, Jiaogulan, green tea, spearmint, and Calamondin. I grow all except hibiscus, am planning to grow that. A squeeze of Calamondin adds a nice citrus flavor to teas. I have a jar of dried Calamondin peels that I add to tea blends sometimes, but I like it better using the juice.
