Calamondin Honey for tea

Here's another way to use all those calamondin fruits.

My wife is getting on the citrus band wagon too. Today she made another batch of Calamondin Honey. I didn't know she had been making this until today.

She said she uses it when making tea. It's just Calamondin slices smothered in Honey. She uses a spoonful when boiling Ginger root & Calamondin tea, or when just making a regular hot water tea. She said she can freeze the Calamondin honey too and still spoon it out, because honey doesn't freeze.

Just thought I'd share an interesting way to use calamondins. For a citrus that's often considered just ornamental, its fruit seems to make its way into many areas of our kitchen.
