One light, too small of an area for 3 pendants.

One pendant, but make sure it looks okay with that giant hood vent.

Will you also be hanging 3-4 pendant above the kitchen island? I ask because it would be nice to have a similar, or matching pendant style throughout the kitchen.

just can lights over the island. I don't like to see pendants competing with that hood
