You could look into rail or cable lighting systems from WAC, Tech, LBL, Nora and others as one possible solution. Attached image is a Tech two-circuit rail installation in a timber-frame kitchen, with 9' ceiling.

Work with a lighting designer or your electrician for help in determining an appropriate quantity & quality of light for any given space / use. Advantages to rail/cable lighting is that you can add more fixtures over time, and they can be re-directed as needed.

Our example of just such a system... the ceiling above the "working triangle" in our kitchen is not amenable to recessed/canned or pendant lights. We do have cove that allowed us to install a hidden transformer for low voltage Tech track lighting, which is similar to the rail and cable system Brillianti recommended. It is more expensive, but you get a large variety of choices, and it is easy to add more light if you need it. We ended up doing just that - adding 2 more heads to the 6 we initially installed. Attached is a photo where you can see the edge of the track lighting in the upper right. There is a perpendicular track that runs above the lens' field of view.

The cove also allowed me to install RGB LED lights from FlexFire that look spectacular (well, at least to us).
