Well pump

Well, this isn't exactly an exciting project in the design sense, but, as new property owners with an existing well, we could use some advice. We recently purchased a piece of property with an old house which we tore down. (was full of mold so not worth saving). There is an existing well on the property and the tank was in the basement and one of the few things we saved because it looked fairly new. We did call the local permitting department but they had no record of a new well being dug in the past 30 years (property was over 60 years old). What we were told was that there might have been a new pump and tank put in that did not require a permit.
Here is our dilemma. The new builder we contracted with is urging us to put in a variable speed pump in the well. Since there is no electricity yet to test the existing well, we are thinking it is premature until we know what the well will do with the existing pump. We asked him to pull the existing pump to see what we could determine but to no avail. Since he is digging a new ag well for a sprinkler system, he wants to do it all at the same time.
Fellow HOUZZERS, if this was your property, what would you do? Any advice is appreciated. Thank you
