I would do all butcher block for counters with dar green cabinets , for sure not green soapstone it will clash probably

I'm wondering if a honed Virginia Mist could work for you? It is considered mid-range granite $85-100 per square foot. And looks like soap stone!

what is the floor? soapstone on top of dark green island is fine but i think a simple white corian on the perimeter w a simple white subway splash would be the best. You get a nice and simple contrast w the green and very complementary contrast w the soapstone. I dont think laminate would be as nice.

your soapstone will take center stage..you can keep it simple on the perimeter slabs....but better than laminate shouldnt be difficult [ look at corian ]

Designing your own kitchen can be fun, but I strongly urge you to run the final iteration past a CKD. You can unknowingly design in catastrophies that don't appear until the cabinet handles are installed and the dishwasher door won't open or scorching a backsplash that doesn't appear until the first time you cook dinner. Laminate countertops have made a great comeback, lost of great options.

With your dark green cabinets, I'd look for a lighter wood tone rather than dark to compliment your dark island stone.
