Need help on New Kitchen in a 1930's home that is totally being gutted

The home is stone and we used the outside walls on the inside in the butler's pantry and conservatory. We are bringing the stone look into the kitchen for the hood. We have beams in an other room so bringing that also into the kitchen by adding 3 beams. It is a very large kitchen with a lot of light but facing south. We like dark ...very dark. The floor is walnut with a scraped texture and pegs. We have an L-shape by the windows, tea/coffee station, hutch area by the refrigerator and a large Island.
Love a light Quartzite (Madre Perla) but very $$ to do everywhere. Found a leathered black granite we could do on all areas but the island which would be the Quartzite. Want to do the cabinets in a darker brown that is the deepest shade of the walnut floor.

Any stain color suggestions for the cabinets?

Would you break up the cabinets and do off white for the L-shape and stained for the island, tea/coffee area and hutch area OR is that look over?
