I’m not sure I understand what you are after, Max. Until your seedlings bear fruit you don’t know if they will be worth grafting onto a root stock. Are you sure you don’t have this back to front and want to use the seedlings as rootstocks on which to work some good quality scions?

Yes your seedling is now the rootstock and you want to graft a known variety for fruiting like haas or whatever you like best
