We recently purchased a house that has two mature apple trees, one small about 3ft tall (I think it fell over at one point) and one that is maybe 10-15ft tall. It has been raining almost nonstop for maybe month and the trees are becoming waterlogged. They both have about a 2x2 foot mound around the trunk but then it slopes off and water is pooling under the tree.

The rain doesn't stop for long enough for the water to dry up so my question is: Should I just wait and amend the soil once we get some nicer weather or is there something I can do now even while it's raining?

Both trees produced fruit last season but the fruit on the small tree was quite small and i'm not sure if it ever ripened and the fruit of the large tree had small brown spots trough the flesh and seemed to drop from the tree before it was fully ripe.
