I would shorten the kitchen ceilings to 102”-108”. Maybe do a tray ceiling if framing has already begun.

Unless you have a larger than average budget, taking cabinets to the ceiling quickly breaks the bank. Having a large expanse if blank wall above the cabinets isn’t the best look, and placing clerestory windows there would be more costly than stacked cabinets.
