Color temperature I always go with is 3000K. It is most common and easy to match with the under cabinet lights. As far as lumens are concerned that's hard to say. You may have to experiment. You may also want to install dimmers which may or may not require different power supplies or drivers.

I would have probably gone with 5000K but for your advise. I do plan to install dimmers, probably a few at a time as good low voltage dimmers are relatively expensive. What is your take on spot vs. flood? My ceilings are nine feet.

Sorry for the delay in getting back to you. Spot vs Flood lighting is hard for me to define with clarity. Your two goals should be good task lighting on the work surfaces and good general lighting to avoid dark spots and or shadows. Think about putting task lighting on separate switches from general lighting. It's also nice to have lighting at the entrances to the room on a separate switch. That will save a lot of stubbed toes in the early mornings when it is still dark out.
