Your layout is difficult to see/read, which might be why you aren't
getting more responses. I agree with eam44--DW on each side of the
clean-up sink, so that you don't lose track of what's in each DW.

The layout could be much better. Right now you will be prepping on the
island, then walking everything around to the cooktop. Will you use a
tray to carry cut up veggies and other chopped ingredients? If you
could m/l switch the fridge and cooktop, then you could carry items
from the fridge, rinse in the prep sink (which should be at least 18"
wide, IMO), slice/dice/chop in the prep space to the left of the sink,
then pivot and drop prepped ingredients on the cooktop/range.

Thank you mama goose. Unfortunately the clear pdf was just too large so I ended up taking a picture of it with my phone hence the poor quality. I actually initially had my cooktop and fridge where you suggested but the builder designer suggested I switch them to the way they are now. I was planning on prepping on the island in front of the sink (thanks for the sz recommendation) which would be also opposite the cooktop.
