Nice vanity. I would suggest removing the medicine chest and put up new drywall there. You only need one mirror. It should be over the back of the vanity. I would choose one with a thinner frame than the one you show. Or since you need storage, use a medicine chest there instead. A white wall cabinet above the toilet would look nice as well. We use towel hooks and they work great, you could also add a towel hanger to the back of the door. What type of lighting will you be using?

I agree, take the mirrored cabinet down, and replace it with a wooden or painted, non- mirrored cabinet over the toilet. Lighting is important, with the large mirrors, you're restricted to lighting above the mirror. With smaller mirrors, you can use side lighting, which doesn’t cast shadows. All that really needs reflecting here is your face, if you need a mirror to check out clothing, etc, a full length mirror on the back of the door would work.

Agree with the others. Remove the medicine cabinet, hang the mirror above the sink, and if you need storage put a cabinet over the toilet.

I am thinking about using a gooseneck type light over the mirror maybe in a mint green color. Thank you for all the input sounds like the medicine cabinet needs to go.
