I am assuming you mean Pygmy Date Palms (there are lots of 'pygmy palms')? Date palms usually move fairly well, but replanting them at a new angle will only result in yet another curve of the trunk (which MAY end up looking cool... or very weird, and could end up weakening the palm over all). My recommendation would be plant them as they are now. Next time if you want straight palms, you need to stake them straight as soon as they 'flop over'.

I think your idea of up-righting the palms will create a unique look. This will create more movement in the trunk. Phoenix Palms move relatively easy, just don't take them for granted. Water regularly and often till roots re-generate.
