Backsplash -- constantly fresh

Why does a cooktop backsplash need to be tile or glass? Love both but the permanence is stifling my commitment for our renovation. Could I also use a simple paint or wallpaper, and coat it with easy to clean finish? I could chNge those any time I felt the whim. Wallpaper map one season, simple grey blue or orange paint the next one. Why not? Too craftsy and not professional? or is there any danger in paint/wallpaper behind stove? Thanks for thoughts.

It needs to be any non-combustible surface. You also cannot use reconstituted stone behind a gas cooktop. You can use blue-board & paint it as long as it is fire-rated. It is simply a case of safety.
