Kitchen design - help, please?

First time Poster, so bear with me...

We just bought a house that needs new everything. We have gutted the kitchen, but this was right before. (Pictures taken when the house had no electricity.) On the side with the breakfast nook, the counter extends so that a few barstools can be placed on that side.

Refrigerator, oven and microwave were on this side.

Hard to see... I know

We are going to purchase white cabinets, obviously paint, new hardwood (they had pergo down), and granite countertops.

So my questions are....

1. Would you keep the U-shape on the one wall? For some reason, that bothers me... but I may just be crazy.

2. Would you take cabs to the ceiling? With molding? They are only 8 foot ceilings, and I don't want to make the ceilings seem short.

3. What type of light fixture would you put in middle of ceiling? I'm not a huge fan of track lighting, since look nice but I wouldn't be opposed to something different.

3. I would have recessed lighting all along the ceiling about 5" out from the upper cabinets to illuminate the counters. A central fixture will only put shadows on the counter where you are working, and with 8' ceilings, you would be stuck with a ceiling mounted boob light.

I would eliminate both return peninsulas and place a narrow island in the kitchen on rollers.

Bring the uppers to the ceiling, longer doors will make the space look taller.

Use can lights for general lighting and add a pendant over the sink.

I would keep the U shape since you are losing already limited amount of counter space.
Having cabinets go up to the ceiling will make the ceiling look higher. From a practical point of view, it gives you more storage.
Recessed lighting is probably the best option, however you may have to pull electricity which can cost you a pretty penny. If that is not an option, you can install a simple fixture.
It may also be beneficial for you to change the floor plan on the other wall since there are two small counter tops, making that it look a bit broken up. It's not good for practicality either. Best idea would be to put the oven on one end and fridge on the other. Like that you have one longer counter top between the 2. That is of course if the oven and fridge connections allow this.

don't move the range near the wall- you need a minimum of 6" counter top space on one side so you would end up with one useless counter space and another slightly larger than you have now. leave them as equal spaces.

If anything when you remove the peninsulas relocate the fridge to the right of your DW and then center the range on the full length of your wall.

You can put an oven near the wall as long as it's properly insulated. Putting a fridge between there may look awkward since a fridge tends to stick out more than cabinets do. You will also be obstructing the view from one room to the next, only making the kitchen look darker and smaller.
