Kitchen Counter Confusion

I had to choose cabinet paint color before I had a sense of the overall design that I was going for during a whole-house remodel. I chose a darker blue-grey color. I have always wanted soapstone counters, but now I'm afraid it will make the overall look too dark. The only soapstone I have access to is highly veined, almost like marble. It's gorgeous, but a bit much for our small kitchen that already has a fair amount going on with the cabinet color. Light colored granites and quartzites seem a bit washed out . . . I'm now leaning toward wood counters. The home is too casual for anything too shiny or patterned, like fancy granites. I prefer natural materials to quartz or solid surface.

Context: The walls are white. Floors are rustic saltillo tile. Open concept home with vaulted ceilings--so lots of white. Kitchen itself is small with a C-shape including pennisula with seating on one side facing the dining room (so one relatively large expanse of countertop visible from all rooms). Stainless appliances. Blue color is mostly on lower cabinets. A small bank of two blue cabinets above & the rest is an open slate of white walls. Planning on adding tile to the ceiling (white subway or possibly rough white-grey marble cubes) and some open, wooden shelving.

Overall in the home, we are going for a meld of contemporary-clean-minimal with casual-natural-slightly rustic, but can't seem to bring it together in the kitchen! Thanks in advance for any help or opinions to consider!
