We do marble in kitchens all the time! You'll want to do a honed (matte) finish instead of polished. The polish on marble tends to etch when anything acidic gets on it (citrus, vinegar, wine). Marble is also a softer stone, so it tends to scratch. But, because it is soft, it is easy to refinish. Staining is not an issue as long as there is a good sealer on it and you do not let messes sit on it for an extended period of time. Marble is a beautiful choice for a kitchen!
