I'm doing Caesarstone's organic white in my laundry room and I really like the organic white but It may look a bit more brown against your brown cabinetry. In the pictures I attached the stone is organic white with a hickory wood in two different lightings.

I would go with a pure white color myself. Not necessarily Caesarstone's pure white as I'm not familiar with it but a white that doesn't have any other colors in it- a pure white. Organic white has flecks of other colors in it.

Worrying about dirt showing up is always going to be an issue so going with a white that has other color in it will help with dirt not being quite so apparent. I hope this helps and good luck.
