Question regarding beadboard

I love the look of beadboard. I was hoping to install some either in the kitchen as a backsplash, or in the bathroom to cover ugly wall tile. I was told it couldn't work due to the water & moisture in those two places. It would mold and/or eventually rot. Does anyone know if this is true or has anyone used it for either of these spaces and what was your experience if so?

Not sure as a backsplash it's a food choice but I have used it in several bathrooms.
However, my was installed over Sheetrock, not tile.

Could you score sheet rock right above tile, remove and then add beadboard and chair rail?
