Kitchen Lighting Help please!!! :)

Hi everyone! My husband and I are doing some renovating on our new home, and I'm having a dilemma on what to do about our lighting in the kitchen. The existing lights in the kitchen include a recessed light over the kitchen sink, light in the eat in area, and a flush mount center light. Pictures attached. We purchased some pendant lights to put in over the peninsula and sink, and I am replacing the chandelier (links to those items are below as well), my dilemma is what to do about the center light. I find it to look silly just being in the center of the room not really over anything. I suggested to my husband that we just take the light out and cover the hole in the ceiling, but he is concerned about the lack of light on the opposite side of the kitchen (which I don't disagree with). Do you have suggestions on other options? Any help from some pros, or those who have a similar layout would be much appreciated! :)

Also, just an FYI since these photos were taken, our cabinets have been painted BM White Dove, and the walls are going to be painted SW Wool Skein...so it won't look as dated as these photos appear ha!

See the kitchen lights...
