Old Dehydrated Peppers

Hello! I must say, sadly, I have been out of the hot pepper game for awhile and missed this awesome group.

However, after my last big harvest 2 years ago, I dehydrated all my peppers. I just opened the bag and they still appear to be in good shape (slightly soft, no mold, etc.). The only difference is they were once a dark orange and now have turned to more of a brown/burgundy color.

I plan to grind them up into a powder. Anyone else uses such old peppers? Still safe?

Agreed. I am still overwhelmed by pepper harvest 2016 and it's time to see what's hiding in my freezer.

Huh.... interesting. I wish I had that many peppers. I just eat them fresh as they come and save whatever I don't eat. By the end of the season, I dry up all the peppers and make a chili powder.

Dave, I wanted roasted sweet red bells in the freezer plus I froze sliced peppers for winter casseroles. I am fortunate to be able to plant as many peppers as I want but I overdid it in 2016. I also grew too many hot peppers so I also experimented with different hot sauce recipes. It was fun but now that I have favorite recipes noted, I won't be growing a lot of hot peppers every again. This year only two.

done and delicious :). fully stocked again.

seems to have lost a little heat, but still does the trick!
