Mixing countertops

I see a lot of kitchens with a different countertop on the island vs the cabinets. I'm considering trying it out, but what are the rules to mixing materials? It looks like one is always butcher block, but I'm not interested in wood counters. My cabinets are a medium wood, rustic and somewhat knotty.

Countertop usually will be in a contrast color to your cabinets

As you mentioned, Jill, having the island counter top differ from the cabinet run counter top is a very common practice. Yes, it can be done with butcher-block, but it certainly doesn't have to be! Remember that there are no rules to design so you can have whatever you think looks good. If they are going to be different, they should be obviously different - contrast is the key. Light vs. dark, veined vs. speckled, etc.
