We had close to the same situation. Google LVL (laminated veneered lumber) and Weyerhaeuser or Georgia-Pacific (GP). One of them has engineers that will tell you what size LVL beam you need to carry the load so you can remove the entire wall .
We replaced ours with a steel beam, two steel posts welded into plates bolted into the floor then I had a local cabinet maker make some fluted columns.
Not completely open but a good result.

What is the goal and are you open to replacing the flooring?

HI -- You will need to talk to a good contractor for that answer . But I would still have enough of a wall to shield the front entrance from the kitchen and remove the rest of the wall . There might have to be a beam but that could add a decorative element . But this change will affect your floors and they will need to be replaced or matched etc. Looks like you have real hardwood in the living room and vinyl /laminate in the kitchen. I would try to match the wood flooring to the real hardwood . Have consistent flooring throughout . Remember one reno leads to another !

Yes the flooring will have to be replaced. If I had no limit to my budget I would even vault the ceiling. But I’m not looking to go broke over this project. The upper cabinets will have to be replaced and I’d like to remove the U-shaped counter and do an island. Put in a new taller window above the sink that opens to the deck so we can pass through food/dishes.

You need an experienced designer who has connections to an experienced contractor who has connections to an experienced engineer. Be ready to be saved from yourself, please.
