For the ceiling light, I'd just replace the fluorescent with a track light system.

i put mannington wood-look sheet vinyl in my kitchen 2-3 years ago. I like the look and the warm, soft feeling. It's easy to clean too, just warm water with the occasional mannington cleaner.

I think you need something with around 2500 lumens. That one has only 1520.

Also, I'd choose a finish that blended in more with the ceiling. A track light fixture is something you don't really want to feature, but rather fade away.
