Need Help with Dining Room Lighting Issue

We just moved in a couple of days ago. After the home inspection, it was found that we have vermiculite insulation in the ceiling. We haven't had it tested yet in fear of shelling out a bunch of money to get the insulation replaced. At the moment, there is one globe light in a really awkward position and no junction above where we would like to have our table. We jumped the gun and bought an overhanging floor light, but with such plush carpet it is not stable and very impractical for anyone sitting at the table who may bump into it. Also, we're not crazy on the way it looks. We can't drill into the ceiling because of vermiculite, but can drill into a stud, so were thinking about chaining a pendant light from the outlet behind the table, but I am finding the options for pendant lights either unattractive (in my opinion), or non-existent. We don't want to do wall sconces or side table lights. Any specific lights that you have seen or know about are appreciated.
