Where I grew up old farmers preferred very old poultry waste.

That kind of depends on what the soil needs.

What is the pH of that soil?

What are the levels of nutrients in that soil?

Poultry and horse manures tend to be higher in Nitrogen than coe, sheep, and goat manures.

In the PNW, I would go with dairy cow manure as a) it is plentiful and cheap and b) a cow's digestive system removes/negates most of the weed seeds. My second choice would be chicken manure but that often contains high levels of soluble salts and excessive phosphorus. Too much phosphorus can be a problem in this region.

And ANY manure added to a vegetable garden should be very well aged or composted. I would avoid adding any fresh manures unless there was a good 6 months between application and planting time.

Sounds like you may already have an organic material bonanza. As in maybe you actually shouldn't add anymore - at least at this time.

Last fall we collected soil samples from a local organic demonstration garden and sent them out for
nutrient analysis; this garden had recently experienced some soil and plant health problems. Every single
one of the sites that was tested came back with nutrient readings off the scale. In large capital letters the
report warned “DO NOT FERTILIZE THIS SOIL.” The excessive addition of nutrient-rich compost to
this landscape contributed not only to plant health problems but to nutrient loading of adjacent natural
waters.

It is important to understand that organic matter does not hang around for very long, especially here in the PNW where mild temps and adequate moisture for a large part of the year encourage rapid decomposition. It needs to be replaced on a fairly routine basis. And it is hard to consider any organic matter "nutrient rich".......yes, compost or composted manures do contain plant nutrients but at very low levels compared to almost any kind of fertilizer. In fact, it is common for vegetable gardens here to need additional N input over and above whatever OM may have been added.
